A Full Day of Vegan Food Your Kids Will Love
Most vegans today weren’t raised that way. As more and more people are going vegan, though, more and more kids are having vegan foods introduced to them at an early age. Wherever you and your family are on your vegan journey, these meals are sure to be a big hit!
Special thanks to Compassion and Cucumbers (C&C) for providing these delicious, kid-friendly suggestions.
Breakfast
A healthy breakfast is an important start to the day. Vegan Eggcelent Brekky Bites can be made in advance and frozen or eaten fresh. Both options are great on the go. Yum!
What you’ll need!
1 bottle Just Egg vegan egg
1/2 cup shredded vegan cheddar cheese (I like Daiya)
1 yellow onion
1 red bell pepper
1 Tbsp olive oil
1/4 cup flour (C&C use garbanzo flour, but all purpose would work too)
1 tsp baking powder
How you make it!
Preheat oven to 350F
Dice onion & pepper
Saute in olive oil until soft
In medium mixing bowl, whisk the flour & baking powder in with the Just Egg
Add in cooked peppers and onion
Stir to combine
Lightly grease a muffing pan
Portion mixture into muffin pan sections
Bake for 30 minutes and test with a toothpick
If it doesn’t come out clean, bake for another 5 to 10 minutes or until done
Let cool and remove from pan
Lunch
You started your family off with a delicious, healthy, vegan breakfast. Keep that momentum going with a fabulous, and easy, vegan lunch. Better Than Fast Food-Vegan Fish Sandwiches can be paired with fries, sweet potato fries, or tater tots for even more fun!
What you’ll need!
1 package Gardein Fishless Filets
1 jar sliced dill pickles
1 package vegan cheddar slices

Lightly spread top and bottom buns with vegan mayo
Place 1 or 2 cooked filets on bottom bun
Top with vegan cheese and pickles
Add top bun and enjoy
Yum!
Dinner
Whether dinner is a family affair or everyone eats when they want, you can easily provide a vegan option everyone will love. The Use Your Noodle-Cheesy Pizza Noodle Bake is sure to be a hit. Try it with elbow noodles or any other favorite pasta shape.

Dice onion and pepper & sauté in olive oil until softened
Slice pepperoni into bit sized pieces
Preheat oven to 350F
Lightly oil a 9×13 casserole dish

Dessert/Snack
In my house, no meal is complete without something sweet and vegan. Sound familiar? Try Bananas For Chocolate! Banana Bread! You could add nuts, vegan M&Ms, or anything else fun you want!
What you’ll need!
3 very ripe bananas
1/3 cup granulated sugar
1/3 cup brown sugar
1/3 cup canola oil
2 tsp vanilla extract

1 tsp baking soda
1 tsp ground cinnamon
1 tsp salt
1 cup vegan chocolate chips
How you make it!
Preheat oven to 350F
Lightly oil a 9-inch loaf pan
If you want to make things even easier, add a strip of parchment paper with a bit hanging out to help with removing after it bakes
Peel bananas and add to a medium-sized mixing bowl
Mash with a potato masher or fork
Add white & brown sugar, oil, & vanilla to the bowl
Mix well
Add the flour, baking soda, salt, & cinnamon
Stir til combined, but don’t over mix
Fold in chocolate chips
Spoon into loaf pan and smooth with top of spoon
If you want, you can top with a little brown sugar for a crunchy top
